Maple syrup is unique to North America and Québec is the largest producer. It is used in its natural state without colour or any other additive. It is the pure, boiled sap of the sugar maple (Acer saccharum). Maple sap is composed of water (97%), saccharides, fructose and glucose. It is a source of amino acids, proteins, organic acids and a number of vitamins. Maple syrup is found in many traditional Québécois and international dishes.
